
Hello World! It's great to see you! I am so excited that today brings us another chance to take control of what we have become. I want to accomplish so much more than I have in so many aspects of my life that I can't afford to feel bad due to extra weight. I have lost 2 pounds since I have made the committment to serve an eviction to those 47 pounds and I did it with little discomfort. I admit I wanted brownies yesterday, or rather brownie dough. (I like that much better than the brownines themselves.) But working outside, bananas, and Skinny Cow icecream got me through.
Supper was wonderful, filling, and very low cal. I sliced chicken breasts into small bite-size pieces and sauteed them in 1T Shedd's Spread Country Crock (the kind with calcium), after spraying Pam in the skillet. When the chicken was almost completely done, I added a ton of cut up bell papper and onions and finished cooking it. I added enough stirfry sauce to flavor. Then I steamed 2 pkgs of Birdseye Asian Vegetables, added them to the mixture and served over 1/2 cup rice. The only real calories are in the chicken (make certain you only use breast with NO fat), the rice (eat only 1/2 cup!)and the stirfry sauce. I don't use as sauce much as I would like to add but since I fixed it for others in the family, I simply heated more sauce and served it as an option along with soy sauce. I always eat a LOT or the veggies as one whole cup only has less than 50 calories and NONE from fat. Anyway, the meal was absolutely delicious and my husband asked for the leftovers in his lunch today. HEALTHY EATING with BIG RESULTS!
If anyone has found a low-cal stir fry sauce, please let us know as I don't know of one YET.
Tip for the day: If you are like me and have a sweet tooth: You can use Nature's Own Light bread, Shedd's Spread Country Crock with Calcium, and Smuckers SugarFree jelly for that wonder toast and jelly we like so much. Bread (40 cal per slice) Country Crock Shedd's Spread with calcium (1T 50 cal and you can make that go a long way) and Smucker's Sugarfree Jelly (10 cal per 1T). Smucker's comes in a wide variety of flavors and if you find it isn't quite sweet enough for your taste, remove it from the jar and blend in Splenda until you are satisfied. Return to jar for storage. This makes a wonderful sandwich when the sweet tooth monster gets you!

Your supper sounds wonderful. It is making me hungry. I do a version of that but instead of rice, when the cooking is almost done, I crumble a package of dry ramen noodles (discard the seasoning pkg.)in and stir. I let them cook and soften some, but not too much. I like it to have a little crunch. I think I will be making this for dinner soon.
ReplyDeleteJust a little something to share..... I have found a pita bread that I like to use for sandwiches. Joseph's Heart Friendly Oat Bran and Stone Ground Whole Wheat Flour Pita Bread w/ plant sterols (whatever that is) Anyway,they are only 60 calories for 1 pita!! I like to cut it open and fill with roasted turkey or chicken, a slice of fat free cheese, a slice of tomato, shreaded lettuce or ,sometimes, I use broccli slaw, give it a smear of light mayo and dive in. It's about 160 calories for the sandwich, and it looks huge!!! With the pita bread, you can really load in the veggies and they won't fall out. Holy Smokes, I am ready for lunch. I will be making one of these yummy sandwiches for my lunch today. :)

I got the pita bread at Wal-mart on the bread isle. At our store, it was near the english muffins and bagels on the bottom shelf. Don't know if that will help at your store though. LOL. I really like them. And the calories!!
ReplyDeleteI did something different today. I made tacos and cooked the ground meat (93/7 lean) in my steamer. I am loving this steamer. All of the fat was in the drip tray after cooking. I crumbled it as it was cooking and then put it in my small skillet and stirred in a little seasoning. My daughter said it was the best taco she had ever had. With the taco shells having 50 calories each, I limited myself to 2 and loaded them up with chopped lettuce, tomato, and bell pepper. I don't know, just made me feel better about eating a taco.
Wow! Those sound great. I think I should invest in a good steamer. Maybe you could take a picture of yours and post it. We had homemade pizza. My husband is going to be a little harder to convince regarding the pizza stuff because he has something in his head about what a pizza should be and is not going to change it. I used a pizza crust already prepared that was the lowest in calories and fat I could find. Then I brushed a little olive oil on it to moisted it. Made an outter ring of fresh romano tomato slices and filled the inside with 2T pizza sauce, tons of sauteed onion slices, bell peppers, chopped jalapenos, cucumber slices, and topped with garlic salt, black pepper, and low fat cheese. On his side I put a few pepperoni to make him happy. Popped it in the over and ate a great pizza with no associated guilt. Love this stuff we are doing! Candice, what did you cook? You better take care of yourself! I know you don't cook a lot but you better start before you starve!
ReplyDeleteHey, that pizza is a great idea. I make pizza pretty regular. And, my husband thinks he has to have it loaded with sausage, pepperoni, and anything else fattening he can think of. He's a skinny man that can eat whatever and not gain an ounce. I keep telling him it will catch him some day. I need to check out my crust options though. I have been using the canned pilsbury one.
ReplyDeleteI didn't do anything special for dinner tonight. I cooked some greens (seasoned with Ms. Dash0, made a Hormel microwave roast, and had mashed potatos for the hubby and the kiddo. I had a small portion of roast and then ate my fill of greens.
I was going to get a picture of my steamer, but I don't see how to post it here. It's just a Rival double tray steamer. I bought it for steaming tamales and have ended up using it for so much more.
I don't "cook" anything really except oatmeal and what I call "single people food". I would like to, but there's really no point in it for me. I do try to eat as many natural or what I call "living" foods as possible. Also, I'm poor. Nuts, seeds, vegetables, fruit, and plain yogurt. In other words, no processed/pre-packaged foods (like Lean Cuisines)...most of those are loaded with sodium, hidden sugar, and other preservatives that I don't want in my body.
